How To Make Corn Casserole With Jiffy Corn Muffin Mix

Honestly, this is probably one of the easiest recipes you’ll ever make. It’s basically a dump, stir, and bake recipe.

Start by whisking the egg in a large mixing bowl, then add in the cream style corn, whole kernel corn, sour cream, and melted butter. (See the recipe card below for the full printable instructions.)

Gently mix in the Jiffy Corn Muffin Mix (you don’t want to overmix it), then pour the batter into a greased baking dish.

Make Ahead Instructions

This is a wonderful make ahead recipe for the holidays!

All you have to do is prepare the casserole as instructed and pour it into the greased casserole dish. Tightly cover the baking dish with plastic wrap and store it in the refrigerator for up to 24 hours.

When you’re ready to cook it, let it rest at room temperature for 30 minutes before following the baking instructions in the recipe card below.

Optional Add-Ins

The most popular addition is to add a layer of freshly shredded cheddar cheese on top.

There are two other ways you can play with the flavors of this side dish – meat and vegetables.

Meat: Some cooked bacon, browned sausage crumbles, cooked ground beef, or sliced deli ham would all be wonderful in this recipe.

Vegetables: Diced sautéed jalapeños, diced sautéed onion, and canned green chilies would all be delicious additions to this casserole.

What To Serve It With

This recipe can go one of two directions. It can be the perfect side dish for Thanksgiving or for Christmas, but it can also be a wonderful side for a family dinner throughout the year.

If you’re serving it for the holidays, it would be amazing with a roast turkey or our super popular Copycat Honey Baked Ham Recipe. Try serving it alongside some mashed potatoes, gravy, cranberry sauce, and a green bean casserole.

If you’re serving this for a family dinner during the year, try pairing it with one of your favorite chicken recipes, some classic Chili Con Carne, or Cream Cheese Chicken Chili. It’s also really delicious with Mexican-inspired and Mexican recipes.

Some of my favorite recipes to pair it with are:

  • Taco Salad
  • Enchilada Chicken Stuffed Peppers
  • Mexican Picadillo Con Papas
  • Cilantro Lime Chicken
  • Chicken Fajita Casserole
