Make easy layered baked cast iron skillet potatoes for the perfect brunch or dinner side dish. This recipe is easy to make in one skillet for perfectly crispy potatoes with a ton of flavor from onions, garlic and herbs!

Cast Iron Skillet Potatoes have a wonderful mix of textures. The middle is tender and flavorful, while the top layer is nice and crispy! Serve these instead of hash browns for brunch, as a side dish with dinner or serve along with all your BBQ favorites.

Ingredients

  • Russet potatoes
  • White onion – a yellow or red onion could also be used in place of the white onion.
  • Butter – depending on your salt preference, feel free to use salted or unsalted butter in this recipe.
  • Garlic – fresh cloves of garlic are always preferred for the best flavor!
  • Steak seasoning – click the link for my easy, popular steak seasoning recipe, or purchase pre-mixed Montreal steak seasoning on the spice aisle at the grocery store.
  • Fresh thyme – if you don’t have fresh, you can substitute in dried thyme.
  • Fresh rosemary – same as the thyme, if you don’t have fresh, you can use dried rosemary in this recipe.

Instructions

  1. Prepare the potatoes and onion. Slicing the vegetables with a mandoline is the easiest way to get uniform pieces. If you don’t have a mandoline, thinly slice the potatoes and onions with a sharp knife on a large cutting board.
  2. Coat the skillet. Melt butter in a 12 inch cast iron skillet over medium heat.
  3. Make the seasoning. Measure the steak seasoning, thyme and rosemary into a small bowl and stir to combine.
  4. Layer the ingredients. Arrange a layer of potatoes, slightly overlapping, on to the melted butter. Add onions and sprinkle the seasonings and one clove of crushed garlic over the potatoes. Repeat until the pan is filled, about 5 layers.
  5. Top with butter. Place cubes of butter over the top.
  6. Bake. Place the potatoes in a preheated 375°F oven for 40-45 minutes.

  • How do you prevent food from sticking to a cast iron skillet? If your skillet is not seasoned, sticking could happen more easily. Prevent this by coating the pan with butter or oil before adding the food.
  • Is it necessary to boil potatoes before roasting? No, it is not. Simply slice, season and bake for perfectly tender insides and crispy outsides.
  • Can you bake cast iron in the oven? You certainly can. This makes it a convenient tool for recipes that go between the stove and oven such as these rustic potatoes, steaks or casseroles.
  • Can you use another type of skillet? Yes, if you don’t have a skillet, you can use another type of skillet. Just make sure the skillet is oven-safe up to 375°F.

Cast Iron Skillet Rustic Potatoes

Make easy layered cast iron skillet potatoes for the perfect brunch or dinner side dish, that’s both vegetarian and gluten free!

  • Preheat the oven to 375°F.

  • Slice the potatoes and onions. (A mandolin is great for this, but if you don’t have one, slicing them with a knife will work as well.)

  • Melt 2 tbsp butter in a 12 inch cast iron skillet over medium heat.

  • Place a layer of potatoes, slightly overlapping, on to the melted butter.

  • Combine the steak seasoning, thyme and rosemary in a small bowl.

  • As you go, layer onions and sprinkle seasonings and one clove of crushed garlic over each layer.

  • Continue layering the potatoes, onions and seasonings.

  • Once filled to the top (should be about 5 layers) slice the additional 2 tbsp of butter into cubes and place on top of the potatoes.

  • Place in the oven for 40-45 minutes.

    The wife loved them. I did not have thyme or use steak seasoning, used salt and pepper instead. The Iron skillet works great. I stirred them a couple times to help them get crispier. I probably used too much butter…well probably not for Paula D.

  2. This turned out very nicely. Didn’t have steak seasoning, fresh thyme, and I don’t use butter. But I did use coconut oil, dried thyme & rosemary and a garlic/herb seasoning, plus sea salt. It was delicious. I think I’ll cook it at 400 degrees next time to get the potatoes crispier. Thanks for the recipe starter! I never know what to do with potatoes besides baking them.
