Dahi Aloo is an easy and tasty yogurt-based potato curry flavored with aromatic spices. It's a quick curry that takes less than 10 minutes. This curry is gluten-free also.
This is one of the most popular fasting or vrat recipes during Navratri. Dahi aloo or dahi wale aloo sabzi is a potato dish that is cooked in curd as gravy and other spice mix. You can make this curry on normal days with onion and garlic or customize it to make a fasting recipe.
Dahi Aloo Recipe
This is a popular dish in North India. In dahi aloo, we simmer potatoes in a curd or yogurt-based curry. The curd gravy is seasoned with aromatic spices. We use regular Indian spices to flavor the curry. But for the fasting recipe, you need to customize the recipe and eliminate the ones that are not permissible during fasting days, e.g. turmeric powder, hing, etc.
How to make dahi aloo?
Ingredients-
boiled potatoes, yogurt, ginger, green chilies, coriander leaves
spices - cumin seeds, ground cumin, coriander powder, red chili powder, turmeric powder (skip for fasting dish), hing (skip for fasting recipe), salt or rock salt
Instructions
Roughly break the potatoes into mashy pieces.
Add water to the curd and whisk until smooth.
Now heat the oil in a pan. Add cumin seeds and asafoetida (hing), and let them crackle. Add chopped ginger and green chilies and saute for 20 - 30 seconds.
Now add the spices and stir for 5 - 10 seconds. Keep on a low flame to avoid burning the spices.
Immediately add the yogurt mix or the buttermilk and keep stirring continuously until it starts to simmer. Once it starts to simmer add roughly mashed/ broken pieces.
Simmer for 5 - 6 minutes on a low flame. Turn off the heat and add finely chopped coriander leaves.

Tips for perfect dahi wale aloo sabzi
1. Use boiled potatoes for this recipe.
2. To make the gravy thicker, mash one potato roughly.
3. Also whisk curd to avoid curdling of curd.
4. Another thing to take care of when you are making any curd base gravy, keep stirring continuously till it starts to boil. Otherwise, it will curdle.
5. And add salt after it starts boiling.

Ingredients
- 4 medium potatoes boiled
- 1 cup curd whisked
- 1 - 1.5 cups water to dilute the curd thickness
- 1 tsp cumin seed
- 1 inch ginger finely chopped
- ¼ tsp hing (asafoetida) skip for fasting recipe
- 2 tsp coriander powder
- 1 tsp red chilli powder
- ½ tsp turmeric powder skip for fasting recipe
- 2 - 4 tbsp coriander leaves finely chopped
- 2 green chillies finely chopped
Instructions
Roughly break or mash the boiled potatoes.
Heat oil in a pan. Add cumin seeds and let it splutter.
Add chopped ginger, green chillies and all spices. Stir for 10 - 15 seconds.
Add whisked curd to the pan and stir continuously.
Stir until it starts to boil. Then add diced and roughly mashed potatoes.
Season with salt and simmer for 5 minutes on medium flame.
Turn off heat. Garnish with fresh coriander leaves.
Dahi Aloo is ready to serve.
Notes
If you are not making for fasting or vrat recipe, then add crushed kasuri methi (dried fenugreek leaves) and a pinch of garam masala.
For Vrat recipe use rock salt in sted of normal iodised salt.
If any spice (turmeric powder / hing/ red chilli powder / coriander powder ) is not allowed at your place then skip that.
