Chocolate healthy snack balls

These chocolate brownie bites are one of my personal favorite recipes.

I’ve been eating them nonstop for the past few months. And the only reason it’s taken me so long to share is that I do not usually bother to measure the ingredients.

I will just throw everything together and break off pieces of the chocolate brownie dough whenever I pass through the kitchen. It is hard to stay away!

The best part about the recipe is how easy it is to customize.

For example, I am a fan of extremely dark and bitter chocolate. So I like to decrease the sweetener and use raw cacao powder instead of cocoa powder.

But I let my mom try this extra dark chocolate version once, and she said “Please Katie, never put that on the blog.”

So there’s that.

Other customization ideas include stirring in a handful of mini chocolate chips, chopped peanuts, chia or hemp seeds, or shredded coconut at the very end.

You can dip them in chocolate or Coconut Butter if you feel fancy.

Or add melted chocolate chips or coconut oil before blending to give the brownie balls a chocolate truffle texture and extra richness.

Healthy no bake brownie bite ingredients

All you need is cocoa powder, peanut butter, sweetener of choice, and an optional pinch of salt. I also like to add chia seeds.

Unlike many other mini no bake brownie recipes, this one can be made without dates, protein powder, or boxed brownie mix.

And there’s also no flour required, not even almond flour!

You can use creamy or crunchy peanut butter. Or substitute almond butter, cashew butter, pecan butter, macadamia nut butter, or allergy friendly sunflower seed butter.

Make them into healthy chocolate energy balls by swapping out the cocoa powder for an equal amount of raw cacao powder.

Choose your favorite powdered, granulated, or liquid sweetener. I am partial to pure maple syrup. They also work with honey, agave, coconut sugar, powdered sugar, or erythritol for sugar free brownie bites.

Especially if using an unsalted nut butter, I recommend including the optional salt to complement and deepen the rich chocolate flavor.

How to make the brownie balls

Add all of the ingredients to a high quality food processor.

We surmise that using a blender instead of a food processor will yield an overly sticky or tough batter. However, we have not tried this method so cannot say for sure. Be sure to report back if you experiment.

Blend everything together, stopping to scrape down the sides occasionally.

Once it forms a smooth dough, turn off the machine. Stir in optional add ins if desired.

Using a mini cookie scoop or clean hands, roll the brownie dough into balls or shape it into bars. Or you can roll it out and have fun with cookie cutters.

Store in a covered container on the counter for up to a week or in the refrigerator for about three to four weeks.

The no bake brownie bites can also be frozen. In an airtight container, leftovers should stay good for at least three months in the freezer.

Using gram measurements

If you prefer to use a food scale instead of measuring cups and tablespoons, go with the following numbers.

You will need 240 grams of peanut butter, 53 grams of cocoa powder, 80 grams of sweetener, and an optional 24 grams of coconut oil or chocolate.

Do not forget to also add in the optional salt and sprinkle of chia seeds. There is no need to measure the seeds if you include them.

Protein and nutrition facts

At under 100 calories, these healthy chocolate brownie bites are packed with fiber, protein, and nutrition.

Including the optional chia seeds adds omega-3s, calcium, iron, and even more fiber.

Each cholesterol free snack bite contains more than two grams of protein, even with no protein powder required for the recipe.

We have not yet tried replacing the cocoa powder with chocolate protein powder. Let us know if you play around with this substitution before we do.

FAQs

What are the three types of brownies? ›

Brownie textures fall into three general camps… Cakey, fudgy and chewy. Cakey brownies, like the name implies, are light, moist and airy, with a slightly fluffy, cake-like interior. Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact.

Is it cheaper to buy brownie mix or make from scratch? ›

I will still be searching for a tastier, chewier home made version, because of that 45% difference in cost and the added ingredients that I don't want to feed my family, but for this comparison, Pillsbury beats the home made recipe. Do you have an excellent, chewy, chocolate fudgy brownie recipe that is foolproof?

What does adding an extra egg to brownie mix do? ›

If you opt to add more eggs, say double the amount, something interesting happens. Even though you are adding more moisture, the air bubbles that you catch in the extra eggs add volume, which decreases the density of your final product. This makes your brownies rise and gives them a much more cake-like texture.

Can butter replace oil in brownies? ›

You can absolutely substitute butter for the vegetable oil. Use the same quantity specified in the directions (for example, if it calls for 1/3 cup of oil, use 5 1/3 tablespoons of butter). Melt it down, then let it cool a bit. You might not ever go back to oil!

Why are they called S * * * * * brownies? ›

The Londoner describes why they called them "slu*tty brownies" perfectly: "they're oh so easy, and more than a little bit filthy." Just as simple as I would've imagined. They are as easy to make as they are messy to eat. If you look up slu*tty Brownies on Pinterest there are thousands of recipes listed.

What is the old version of brownies? ›

Did you know that Brownies were originally called 'Rosebuds'? Rosebuds was established in 1914 for girls to join before they became Guides. Just one year later, the name was changed to Brownies. Brownies are the second-youngest members of the Girlguiding family, for girls aged between 7 and 10.

What are the ingredients in two bite brownies? ›

Ingredients: SUGAR, BLEACHED ENRICHED WHEAT FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID), SOYBEAN OIL, EGG WHITE, CORN SYRUP, WATER, CHOCOLATE (SUGAR, CHOCOLATE LIQUOR, COCOA BUTTER, SOYBEAN LECITHIN, VANILLA EXTRACT), SHORTENING (PALM, CANOLA AND MODIFIED PALM OIL), COCOA ...

Why did my brownie bites sink in the middle? ›

Brownies are perfect when the middle is just baked, so it sets to a fudgy, moist consistency - if your flour and baking powder are causing the edges to rise, cook and set too quickly, they will give the appearance of a sunken centre, even if the centre is perfectly cooked.

How do you get mini brownies out of the pan? ›

(Tip: I used a cookie scoop.) If not, you'll have some difficulty getting them out of the pan. Be sure to spray the pan well with PAM. When done, let cool in pan for 5-8 minutes, then take a spatula and run around the edges to help lift the brownie bite out.

What is the number 1 brownie mix? ›

Best Overall Brownie Mix: Ghirardelli Double Chocolate Premium Brownie Mix. When you want a delicious brownie for a baking emergency—or just to treat yourself—look no further than a box of Ghirardelli Double Chocolate Brownies.

Is it better to use milk or water in brownie mix? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

Is Duncan Hines or Betty Crocker better for brownie mix? ›

If you like chewy, sticky brownies, I recommend: Betty Crocker Dark Chocolate Brownie Mix. If you like light, less dense brownies with a picture-perfect sugar top that flakes when sliced, I recommend: Duncan Hines Chewy Fudge Brownie Mix.

What is brownie mix made of? ›

Is brownie mix the same as cake mix? ›

If you look at the back of the box of store-bought cake and brownie mixes, you will see many of the same ingredients. The main differences are that cake mixes tend to have more leaving agents and less sugar, whereas brownie mixes tend to be sweeter and have additional fat added.

What is a substitute for 2 eggs in brownies? ›

Use 1–1/2 tablespoon vegetable oil, 1–1/2 tablespoons water, and 1 teaspoon baking POWDER, not SODA. So if you needed 2 eggs, you would just double the recipe: 3 T veg oil, 3 T water, and 2 t baking powder.
