Personally, If I don't have Nigerian stew (beef, chicken, fish or turkey) I believe I do not have food in the house. I can survive few days without stew but 4 days without stew and that's taking it too far..yes I love my Nigerian stew just like that. This recipe has been in my draft since October 2014 and I totally forgot it there like many others in my draft which I will be publishing soon. So today is the day i post this recipe.

By the way, I only realised this when Ebun came to dine at my restaurant and asked me for the stew recipe.

She, fellow food blogger and friend Phisayo and Funmi couldn't stop talking about how delicious it was..infact they called me witch on the day due to the fact of how on point everything they ate were! So this is one of the method I use in cooking Nigerian beef stew (yes I have other methods of cooking it). This is method 1 so readers, Let's get cooking:

HOW TO MAKE NIGERIAN BEEF STEW

This recipe is easy and quick and you only need few ingredients. The ingredients you'll need include beef, peppers, seasoning cubes, oil (full list of ingredients and recipe in recipe card at the end of this post).

Preparation time: 10 minutes

Cooking time 45 minutes

Total time: 55 minutes

INGREDIENTS FOR NIGERIAN BEEF STEW

Beef

Vegetable or Sunflower oil

Tomatoes

Scotch bonnet (ata rodo)

Long red pepper or Bell pepper (Tatashe)

Onions

Stock / bouillion cubes

NIGERIAN STEW RECIPE

DIRECTIONS

1) Make the pepper mix by blending the scotchbonnet, bell peppers, tomatoes and onion.

2) Pour the blended peppers in a pot, put on heat and boil to reduce water content.

3) Boil beef with chopped onions, stock cube and salt then grill or fry the boiled meat.

4) In a pot, add vegetable oil and chopped onions, saute for 3 minutes (If you fried the beef use the vegetable oil from frying the beef) then add in the boiled pepper .

5) Add meat stock, stock cubes and salt and leave it to fry.

6) Add in the grilled or fried beef and let the stew fry for another 5 - 10 minutes.

Cover the pot slightly with lid to minimise splash all over cooker and kitchen worktop.

When the stew is cooked, take off heat.

That's beef stew ready to be enjoyed.

Ingredients

  • 1 kg Beef Cut and cleaned
  • 3 Large long red peppers or bell peppers
  • 1- 3 Scotchbonnets You can use more if you like it hot
  • 400g canned Tomatoes or 4 fresh tomatoes
  • 1 Onion to blend with peppers
  • 1 medium Brown onion chopped
  • 2 Stock cubes/ bouillion cubes
  • cup Vegetable oil you can decant after stew is cooked.
